This is a take off on a recipe I used to make in the 90’s but this one is a healthier version, but so delicious! It’s soy free, gluten-free if you pick your tater tots that are gluten-free.

Ingredients

  • 1 8×11 baking pan
  • 1 bag of tater tots of choice
  • 1 cup walnuts
  • 2 cups mushrooms cleaned with a damp dish towel. Never rinse mushrooms they will absorb all the water.
  • 1 cup  finely chopped onions
  • ½ cup finely chopped red bell pepper
  • 2 cloves of garlic minced
  • 1 heaping tablespoon of tomato paste diluted in ¼ cup of water
  • 2Tablespoons of gluten-free tamari
  • ½ teaspoon liquid smoke
  • 1 Tablespoon smokey paprika
  • ½ teaspoon oregano
  • Pinch of red pepper flakes
  • 1 ½ teaspoons salt
  • ½ teaspoon black pepper
  • 1 ½  bottles of JUST EGG can be found in almost every store It is made from Mung beans and is so good
  • 1 teaspoon baking powder
  • 4-6 scallions white and green part chopped
  • 10 cherry tomatoes cut in half
  • 1 package of your favorite shredded vegan cheddar cheese I used the Daiya brand made from chickpeas. It melts great.

Directions

Line the baking pan very tightly with the frozen tater tots, cook according to the package instructions.

To make the breakfast meat

  1. Soak walnuts in hot water for 30 minutes the drain and rinse. Put into a food processor with the “S” blade and process about 30 seconds until the texture of ground meat.
  2. Cut mushrooms into quarters and add to processor with walnuts and pulse until same texture as nuts and blended together. Remember not to over process into a nut butter but ground beef texture. Set aside.
  3. In a large skillet add a small amount of oil or use a nonstick pan over medium heat, add onions and peppers and ½ teaspoon of salt. Sauté until onions are translucent. Then add garlic sauté for another minute. Add mushroom mixture, diluted tomato paste, tamari, liquid smoke, paprika, oregano, 1 teaspoon salt and pepper. Mix everything together and cook for 5 minutes. Taste to adjust for more salt.
  4. In a medium bowl add the 1 ½ bottles of Just Egg
  5. Add baking powder and whisk together. Add the green onions, and cherry tomatoes.

To assemble

  1. Preheat oven to 375
  2. Scoop the vegan meat mixture over the cooked tater tots, then pour the egg mixture evenly over potatoes and meat. Cover the top with the vegan cheese as much or little as possible. I go for more.
  3. Put baking pan on a cookie sheet and put in the oven for 40-45 minutes
  4. Make sure the middle is firm. Let cool for 15 minutes, then cut into squares and serve.
