Crunchy, White Chocolate, Peanut Butter Bars

These are crunchy, creamy, and just sweet enough. The best part is they are so easy to make.

Ingredients

  • 1 package of white chocolate chips of choice. They usually come in an 11oz bag.
    For vegan use Pasha but you will have to use a bag and a half. For sugar -free try Lily’s
  • 1 cup smooth peanut butter with no oil added, or sugar just pure peanut butter
  • 1 teaspoon vanilla extract
  • 1 1/2 – 2 cups brown rice crispies. One degree is a great brand. Organic and very low sugar
  • 1/4 cup roasted peanuts optional for topping

Directions

  1. Melt the white chocolate chips and immediately put into a mixing bowl
  2. Add peanut butter, and vanilla. Blend chips, vanilla and Peanut butter until well blended.
  3. Fold in Rice Krispie
  4. Put in a parchment lined loaf pan. Top with peanuts.
  5. Put it into the freezer for an hour or more.
  6. Cut into desired pieces and enjoy. Store in the refrigerator. Great at room temperature also. But store in the refrigerator or freezer.
