This Mock Tuna is the perfect accompaniment to a green salad and makes a great stuffing in a tomato or bell pepper half. It is also great rolled up in a nori (raw seaweed sheets used in making sushi) sheet.

Ingredients

  • 1 Cup sunflower seeds, soaked 8-12 hours, drained and rinsed.
  • ½ cup of almonds, soaked 8-12 hours, drained and rinsed.
  • ¼ cup of water
  • 2 tablespoons of lemon juice
  • ¼ cup minced celery
  • 2 tablespoons minced red onion
  • 2 tablespoons minced parsley
  • ½ teaspoon sea salt
  • ½ teaspoon kelp or dulse powder. Can even grind up a Nori sheet, whatever you have on hand

Directions

  1. Place the sunflower seeds, almonds, water, lemon juice, kelp and salt in a food processor fitted with the S blade and process into a paste. Stop occasionally to scrape down the sides of the bowl with a spatula.
  2. Transfer to a mixing bowl, and add in the celery, onion and parsley.
  3. Enjoy!
