This is great for the holidays with the tart and sweet mix of flavors.

Ingredients

  • 1 ½ cups cashews that have been soaked for 2 hours drained and rinsed. The fast method is to boil for 10 minutes, then rinse and drain
  • ¾ cup water start with ½
  • 3 tablespoons nutritional yeast
  • 2 tablespoons lemon juice
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 2 tablespoons Agar flakes
  • ½ cup fresh or thawed frozen cranberries cut in half
  • ½ cup chopped dry figs

Directions

  1. Put everything in the blender except cranberries and figs.
  2. Blend till completely smooth
  3. Pour into a pan on med heat. Keep whisking until it thickens.
  4. Take off heat, add cranberries and figs
  5. Take a piece of parchment paper and line the dish you will be using for the mold.
  6. Put into the refrigerator for 2 hours or more. Then take out of mold and put on a plate to serve.
