Together with the dates these have many layers of flavors. Serve topped with pomegranate seeds and dusted with a small amount of cocoa

Ingredients

  • 1 cup of vegan cream cheese store bought or from my recipe for Simple Cream Cheese
  • ¼ cup pumpkin puree
  • ½ teaspoon cinnamon
  • ¼ teaspoon chipotle seasoning
  • 12 dates that have been sliced opened and the seed removed. Remember you will be stuffing these so don’t cut the date all the way through.
  • Pomegranate seeds for decorating (optional)
  • Small amount of cocoa powder for dusting (optional)

Directions

  1. In a bowl mix the cheese, pumpkin, and spices together.
  2. Using a piping bag or small sandwich bag with a cut in the corner, or a small spoon, fill the dates, then decorate with the pomegranate seeds and a little dusting of cocoa or cocoa
  3. To dust with cocao, put a small amount in a small mesh strainer and tap as you go over the dates
